You will need a full day or two of finding, harvesting and cutting the matured Maximiliana Agave hearts from wild agaves in the sierra mountains, wake up early the next morning to manually fire the adobe oven eight hours prior the introduction of the agave using only local oak wood, the fire should reach an average of 800 Celsius to then continue closing the front entrance of the oven with adobe from the forest.
The Agave is introduced by tossing the sliced hearts over the back entrance of your oven, this should be done fast to avoid heat loss, cover frontal & rear oven entrances with adobe clay, if cracks are present cover them as well, temperature is essential. Wait for a minimum of 24 hours (could be 72 depends on experience and knowledge on your oven) and crack open the frontal entrance with the help of a hammer, carefully (extreme heat remains ) extract the cooked agave and select burnt pieces to discard, the agave will be then taken to your grinding station to be manually grind.
Once the agave is completely shredded take it into the fermentation room, the room should be prior insulated and clean, insert the agave into the oak barrels and add your agave yeast, this process should take a couple of days depending on the evolution of the ferment & weather. Take and insert the agave ferment into the alambique oven, it should be already pre heated and start your distillation process to obtain your finished raicilla.
The whole process to make a batch should take no less than a week, from one ton of wild agave Maximiliana you should obtain an average of 80-100 litres, great things come in small quantities.
